Avocado Caprese & Olive Oil Caviar

I got to have some extra fun in the kitchen today with my lunch. With it still being rather hot here in Texas, I've been trying to keep my lunches pretty light and fresh. Caprese salads are always one of my staple go-to keeping it cool sort of lunches. They're easy to make, taste great, and are pretty healthy to boot.

I've had this little jar of olive oil caviar sitting on my counter for a while now. It's something that I haven't tried before and one of those things that I was nearly so excited to use that I couldn't think of a use for application that I felt would do it's genius justice. Then... it struck me!

Traditionally a caprese salad is drizzled with a little bit of olive oil, so I thought this would be the perfect way to show off the olive oil caviar in a simple and extremely tasty dish that takes little time and effort to toss together; using the olive oil caviar in place of the drizzle.

Isn't that olive oil caviar interesting? You can find it in specialty or gourmet grocery stores. No, no. It's not actually caviar. It's little mini olive oil beads that have been made with using a molecular gastronomy method. I've been looking into this whole molecular gastronomy thing lately after having seen it for a few years creeping up in the trading world of food, but I'm a little scared to try it myself so I liked the fact that this one was already done for me!

If you don't have the olive oil caviar on hand, you could always use a traditional olive oil instead, it just won't be nearly as exciting, haha.

I made my caprese salad a little different by adding in some sliced avocado since this was more of a meal to me today rather than just a side salad. Plus, I mean... avocado. Am I right?

This tasty salad would make for a perfect mini meal, or could be used divided into an appetizer or snack size portion along side an entree for any time of day; breakfast, lunch, or dinner alike!

While this salad isn't exactly something you would want to make ahead of time, it's so easy and simple to toss together that you won't mind.

The Skinny:
Servings: 1 • Size: 1 Caprese • Calories: 266.6 • Fat: 23 g • Carb: 10.3 g • Fiber: 6.4 g • Protein: 7.1 g • Sugar: 0.3 g • Sodium: 97.5 mg

Ingredients:
1/2 Large Hass Avocado, Sliced
2 Large Slices of Tomato
1 Oz. Fresh Mozzarella
1/2 Tbsp. Olive Oil Caviar (or 1 Tsp. Olive Oil)
1 Tsp. Balsamic Vinegar
Pinch of Paprika
Salt & Pepper to Taste

Directions:

Put everything together.

Enjoy right away!
