5 Ingredient Whole Wheat Stromboli
Holy Stromboli! Lately for me, it seems like I've trying to get back to the more simple and wholesome meals. Things that were and still are familiar to me from my childhood. One thing that we cooked a few times when I was younger was Stromboli. Though, if I'm not mistaken, my mom would use refrigerated pizza dough and something more like pepperoni for the meat.
Me though? I'm all about salami. Don't get me wrong, I wouldn't throw pepperoni out of my Stromboli. I just like the fact that salami has a few less calories and fat, while still having the same amount of protein. So, why not?
To lighten this Stromboli up and make it more healthy, I naturally grabbed a whole wheat dough. I also chose a thin sliced (35 calorie) mozzarella, hard deli salami, and plenty of peperoncinis (basically a pickled banana pepper) to give a little bit of a zing!
While I'm generally a bit fan of making my own dough and the like from scratch, I also know that there isn't always time to do that. Not for me, not for anyway. So, today I opted for one of my favorite go-to doughs for saving time. It's a frozen brand of whole wheat pizza dough that is thawed and can be used in almost any way that pizza dough could be. You can always make your own though, or use another dough that might be a favorite.
Though again I would prefer to make my own sauce, I was wanting to keep this as simple and easy to do for a weeknight as I could. So, I grabbed some organic low sodium marinara to give myself just a little bit of breathing room. Usually I have leftover sauce in the fridge, but not today.
I served my Stromboli with a chopped Italian salad that had kale, radicchio, and green onions among other things. All in all it was a perfect little meal that took me almost no time at all to toss together.
If you're feeling extra zesty, try sprinkling a little bit of grated parmesan over the top of the Stromboli before baking for extra cheesy goodness.

The Skinny:

Ingredients:
Stromboli:
14 Oz. Whole Wheat Pizza Dough
6 Slices Thin Sliced Mozzarella Cheese
3 Oz. Thin Sliced Hard Salami
1/2 C. Peperoncini Rings
1 Tsp. Italian Seasoning
Dipping Sauce:
3 C. Low Sodium Marinara Sauce
Directions:
Preheat the oven to 400 degrees F. and line a baking sheet with foil for easy clean up; set aside.
Roll out the pizza dough until about 18"x6" and 1/2" tall.
Arrange the 6 Slices Mozzarella Cheese, 1/3 C. Dry Italian Salami, and 1/2 C. Peperoncini Rings over the dough and roll length wise into an 18" log.
Place the stromboli onto the prepared baking sheet and lightly coat with non-stick cooking spray; sprinkle with the seasoning blend.
Transfer to the prepared baking sheet to the oven and bake for about 25 minutes or until the edges are golden brown.
Remove from the oven and allow to cool just slightly before slicing into 12 pieces.
Enjoy right away!
