Crock Pot Guinness Pulled Pork

How can you go wrong with beer and bbq? Simple. You just can't.

 Seriously. Good. Stuff.​

I wanted to make a dish that had a bit of a twist just in time for St. Patrick's Day. Pulled pork with a Healthified Guinness BBQ Sauce? Yes, please.

As an added bonus, this is basically a hands free dish - especially if you have the BBQ sauce already made up.

I topped the meat off with another serving of sauce and simple slaw (a shredded cabbage blend mixed with some red wine vinegar and seasoned with salt and pepper.​) Served on a whole wheat bun with a side of baked potato wedges. De{light}ful.

The Skinny:

Ingredients:
2 1/2 Lb. Boneless Pork Loin Roast (Center Cut)
​1 Tsp. Salt
​2 Tsp. Red Wine Vinegar
​2 Tsp. Liquid Smoke
​​1 Onion, Sliced
​5 Garlic Cloves, Chopped
​1 C. Healthified Guinness BBQ Sauce

Directions:
​Trim the pork of all it's fat and place it into the slow cooker. Season the meat with the salt, vinegar, and liquid smoke then top with onion and garlic. Secure the lid and cook on high for 6 hours.

Remove the cooked pork, onions, and garlic to a large dish and shred with two forks or toss into your stand mixer with the paddle attachment for a few minutes. Reserve the liquid in the crock pot into a cup and set aside as well. Put the shredded pork back into the crock pot with about 3/4 C. of the reserved broth and add in the BBQ sauce. Cover and cook for another hour on high.
