Skinny Irish Car Bomb Better Than Sex Cake

If you're going to make one dessert for St. Patrick's day. This. Is. It.​

One of my favorite things about St. Patrick's Day is the Irish Car Bomb. A common cocktail using Bailey's Irish Cream, Irish Whiskey, and Guinness.

​I thought it would be fun to make a light dessert that played off the infamous drink.

​This is basically a standard 'poke cake' or 'better than sex cake', lightened up drastically, and incorporating the three tell-tale ingredients of the lovely irish cocktail.

The end result was to die for. My mother and I were licking our plates clean like it was our job. That's because we're so very lady like.​

The Skinny:

Ingredients:
1/2 Box Dry Chocolate Cake Mix
1/4 Can Diet Coke (3 Oz.)
​3 Oz. Guinness Draught Beer
​1 Pkg. Sugar Free Fat Free Vanilla Instant Pudding Mix
​1 3/4 C. Milk
​1/4 C. Bailey's Irish Cream
​2 Tbsp. Sugar Free Chocolate Syrup
​1/2 Tsp. Irish Whiskey
8 Oz. Container Fat Free Cool Whip, Thawed
​5 Reduced Fat Oreos, Crushed

​Directions:
​Preheat oven to 350 degrees F. Lightly spray a 8x8 baking dish with baking or non-stick cooking spray and set aside. Combine the dry cake mix with the diet coke and beer. Pour the batter into the prepared baking dish and bake according to the box directions until an inserted tooth pick comes out clean. Allow the cake to cool for a few minutes.​

Once cooled find a wooden spoon and use the handle end use to create holes in the cake. (Poke cake. Get it?) In a medium bowl, combine together the pudding mix, milk, and irish cream until it just​ starts to thicken. Pour the pudding over the top of the cake and let it sink down into the holes. Spread it out evenly.

In a small bowl combine the chocolate syrup and whiskey together and drizzle over the top of the pudding. Cover and refrigerate for at least an hour.

Once set, top with cool whip and crushed Oreos. Divide into 9 equal squares and indulge!
