Healthified Reuben Sandwich

A typical reuben sandwich will run you well over 500 calories (if done properly.) Stuffed full of corned beef, swiss cheese, and sauce... Oh. The. Sauce.

I've lightened this little beast up by subbing in some sliced turkey breast (it's just not a reuben without a little corned beef!), reduced fat swiss cheese, and some lighter dressing. I had full intentions of making some thousand island... but I honestly don't use it often, and I still had some in my fridge that needed to be used up!

The Skinny:
Servings: 1 • Size: 1 Sandwich • Calories: 357 • Fat: 4.2 g • Carb: 29 g • Fiber: 3.5 g • Protein: 35.8 g • Sugar: 3.8 g • Sodium: 1518 mg

Ingredients:
2 Slices Rye or Pumpernickel Bread
2 Slices Turkey
1 Slice Corned Beef (It just looks like more because it's folded over.... I swear!)
1/4 C. Sauerkraut, Drained
1 Tbsp. Fat Free Thousand Island Dressing
1 Slice Reduced Fat Swiss Cheese
3 Tsp. Stone-Ground Mustard (Or Horseradish Mustard)

Directions:
Lightly spray a pan with some nonstick cooking spray and set on medium-high heat. 
This sandwich does take a bit of 'construction', so I find it's easier to put together before placing in the pan. 

Spread the dressing on one slice of bread, followed by cheese, meats, mustard, and sauerkraut; top with the second slice of bread and place in the pan. Turn the heat down to medium-medium-low.

Once nice and toasty on one side, carefully flip the sandwich over and cook on the other side. You could also use a sandwich/panini press or even a counter top grill to do this if desired.

Enjoy with pickle spear and a beer!
