2 Ingredient Cookies

I didn’t think it could be done, but yes - cookies can be made with a mere two ingredients. These 2 Ingredient Cookies are super east to make, because it’s just two ingredients, and they’re great as a snack, or even for part of a breakfast or lunch. So what are the two ingredients? Oats and banana. The oats do need to be quick oats and the banana has to be overly ripe. Other than that? There’s nothing more to them!
There aren’t any tricks to these cookies. They do end up being vegan, vegetarian, dairy-free, low fat, and bunch of other things that make them into not only one easy cookie, but a healthy one too. I’ve been enjoying mine as part of my lunch with apple slices, peanut butter, and some other snacks treats.
If you’re not a fan of banana, or maybe you don’t have any overly ripe ones on hand, you could swap the banana in this recipe for 1/2 C. of unsweetened apple sauce and they turn out just about the same. The flavor is slightly different, but the texture remains the same along with everything else.
I love how simple these cookies are to make. They would make for a really good recipe for children to start out with baking. Feel free to add anything to these cookies to elevate them; chocolate chips, raisins, or maybe even some nuts.
