I'm so excited! Our forecast this coming weekend gets us down to below 90 degrees F. for the first time this season. It's the true end of summer now as the weather cools off and we roll over into all the great things of fall. One of my favorite things about fall has to be pumpkin. Pumpkin this, pumpkin that, pumpkin everything!
Today I'm celebrating the start of fall with these lovely whole wheat pumpkin pie spice waffles, and man... they are truly something worth waking up for. They are full of pumpkin flavor and the added warm spices that go along with a traditional pumpkin pie. These aren't your average waffles either, they are huge, fluffy, soft on the inside and slightly crisp on the outside; pumpkin perfection.
The taste of the International Delight Pumpkin Pie Spice Creamer goes right along perfectly with these waffles, giving a creamy swirl of seasonal spice flavors inspired by pumpkin pie.
One of my favorite things about these waffles is that they pair perfectly with my favorite cup of coffee and a splash of the same International Delight Pumpkin Pie Spice Creamer; making this the best of the best fall breakfasts. The amazing flavors of pumpkin spice in these waffles makes me all the more excited for the upcoming holiday season.
Many of my most cherished memories revolve around the holidays and our family traditions. Though things have changed through the years, we've always kept cooking and food as a central part of our holidays.
These waffles would make for a great breakfast anytime in the fall, or even on Thanksgiving morning. You could always make and freeze these ahead of time for a quick thaw and heat breakfast for the holiday.
Whole Wheat Pumpkin Pie Spice Waffles

Pumpkin Pie Spice Waffles:
1 C. Whole Wheat White Flour
1/2 C. All-Purpose Flour
1 Tbsp. Baking Powder
1/2 Tsp. Baking Soda
1 1/2 Tsp. Pumpkin Pie Spice
1 C. Pumpkin Puree (Not Pumpkin Pie Filling)
1 C. Fat Free Milk
2/3 C. International Delight Fat Free Sugar Free Pumpkin Spice Creamer
2 Whole Large Eggs
4 Tbsp. Light Butter, Melted & Cooled Slightly
1/4 C. Powdered Sugar
1 Tbsp. International Delight Fat Free Sugar Free Pumpkin Spice Creamer
1/8 Tsp. Pumpkin Pie Spice
Preheat your waffle maker to it's proper setting.
I used my indoor grill with the waffle 'plate' inserts, set on high.
Whisk together your dry ingredients, flours, baking powder, baking soda and spices; set aside.
In another medium bowl, mix the pumpkin, milk, creamer, eggs and melted butter.
Finally, add the dry ingredients to the wet until just combined.
You don't want to over mix the batter here!
Walmart is actually going to be hosting some demos of these creamers from 9/17 - 9/20, so check the list to find a store near you.
Once ready, lightly spray the inside of your waffle maker and pour some of the batter onto the preheated surface.
I used about 1/2 cup of batter per single waffle here on my counter top grill with it's waffle plate inserts.
Close the waffle maker and cook accordingly.
While your waffles are cooking, combine the ingredients together for the spiced glaze; set aside.
When the waffles are done, remove them from the waffle maker and top with a drizzle of your spiced glaze.
