I told you that I was loading up my week up with Birthday inspired eats and I'm on a roll after those Skinny Birthday Cake 'Cake Batter' Cookies. To say that these waffles were a hit this weekend would be a vast understatement. My parents were staying at my house for a couple of days while we were busy celebrating my daughter's birthday. Sunday morning my dad went out to grab some donuts and while he was doing that I thought I would experiment in the kitchen with waffles.
The house instantly smelled of cake batter and everyone that ventured downstairs was quick to say how heavenly it was. Before I knew it I had a plate piled high with waffles and everyone was more than eager to eat these waffles instead of the donuts that my dad had went out to grab. In fact, he was the first one to sit down and make his plate with a stolen waffle! They all raved about the perfectly light and fluffy cake batter waffles, so I just knew I had to them right away.
I used the coffee creamer in the waffles to give more depth to that vanilla flavor that I was looking for. Plus, the rich and creamy coffee creamer keeps the waffles light and moist.

I paired my waffles with a cup of my favorite coffee and a splash of Simply Pure Coffee Creamer and topped them off with some whipped cream and a few more 'carnival' and 'jimmies' style sprinkles for the perfect little post birthday breakfast!
With such few ingredients required, these waffles were super quick to whip up and were still so very full of birthday cake flavor.

1 (17 Oz.) Box Clean Label Vanilla or White Cake Mix (Dry)
6 Oz. Plain Fat Free Greek Yogurt
2 Egg Whites
1 C. Reduced Fat 2% Milk
1/3 C. Simply Pure Vanilla Creamer
1 1/2 Tsp. Vanilla Extract
1/4 C. Naturally Colored 'Jimmies' Style Sprinkles
Preheat the waffle maker to medium heat.
In a large bowl mix together the 1 Box Clean Label Vanilla or White Cake Mix (Dry), 6 Oz. Plain Fat Free Greek Yogurt, 2 Egg Whites, 1 C. Reduced Fat 2% Milk, 1/3 C. Simply Pure Vanilla Creamer, 1 1/2 Tsp. Vanilla Extract, and 1/4 C. Naturally Colored 'Jimmies' Style Sprinkles.
I used Simply Pure Coffee Creamer in the vanilla flavor. I found both vanilla and caramel on the top shelf of the creamer section and my local Walmart.
Once the waffle maker is heated up, lightly coat the inside with non-stick cooking spray and scoop out about 1/3 C. of the waffle batter out onto each section or 'per waffle'.
Close and cook for about 4-5 minutes or until the waffle is starting to turn brown and is cooked through.
Repeat for the remaining batter.
Serve right away with your choice of toppings!
